SWEET POTATO PUFF

   
3 medium fresh sweet potatoes, 2 eggs
  freshly cooked & peeled 2 tablespoons butter
1/2 cup milk 1/2 teaspoon nutmeg
1/3 cup granulated sugar 1/2 teaspoon cinnamon
  

This Sweet Potato Puff recipe with a crunchy praline topping is the perfect side dish to serve with roasted turkey or ham. Place sweet potatoes in a mixing bowl with a flat beater. On low speed), beat in milk, then sugar, eggs, butter, nutmeg and cinnamon, and continue beating for 1 minute. Pour mixture in a greased baking dish. Prepare the topping (recipe follows).  Cover with aluminum foil and bake at 400 degrees F. (preheated) for about 10 minutes. Remove foil and bake 10 minutes longer. Makes 6 servings. Enjoy!

  
Topping
 
2 tablespoons butter, melted 1/2 cup walnuts or pecans, chopped
3/4 cup corn flakes cereal 1/4 cup brown sugar, firmly packed
 

Combine all ingredients in a mixing bowl and toss gently. Spread mixture over top of dish.
